The Perfect Jubilee Recipe

In the spirit of doing good and feeling good, we've been channelling all the Great British Bake Off vibes in the run up to the Jubilee. Baking can help lower stress hormones, such as cortisol and epinephrine. Not only is this good for lowering your levels of stress and anxiety, but that also has a knock-on impact on your sleep, immunity levels, blood pressure and more, thus making baking good for your overall health too.

We’ve been trialling some bakes one has come out on top and we couldn’t wait to share it with you. If you’re looking for the perfect vegan cake recipe, keep scrolling:

INGREDIENTS

CAKE:

400g plain flour

300g caster sugar

1tbsp baking powder

1/2 tsp bicarbonate of soda (baking soda)

300ml unsweetened almond milk

120ml sunflower oil

1tbsp apple cider vinegar 

1tsp vanilla essence

CREAM/DECORATIONS:

Cream of 2 tins of full fat coconut milk

1tbsp maple syrup

1/2 tsp vanilla essence

100g raspberry jam

250g raspberries

150 g blueberries

RECIPE:

CAKE:

  • Preheat oven to 180° Celsius
  • Grease and line 2 x 20cm cake tins
  • Mix all dry ingredients in large bowl and make a well in the centre
  • Mix all wet ingredients in a separate bowl
  • Once combined, add wet ingredients in to dry ingredients
  • Mix together until smooth
  • Split mixture between two cake tins and smooth out on top
  • Place in oven for 30 minutes and rotate at 15-minute mark
  • Once out, check if your cakes are cooked all the way through by placing a skewer through the centre – if this doesn’t come out clean pop your cakes back in to the oven for a little longer.
  • Place on rack to dry

CREAM:

  • Remove the cream from the 2 cans of coconut milk
  • Add maple syrup and vanilla and mix until smooth
  • Once cakes are cool choose the base cake and level it out with a knife
  • Add jam to the top of the base cake with a spatula, leaving around 2cm from the edge
  • Add cream on top (not all the way to the edge!)
  • Place second cake on top and press down until the filling reaches the edges
  • Add remaining cream to top half of the cake

 DECORATE:

  • To decorate, place a line of raspberries down the centre both vertically and horizontally, as well as diagonally both ways to create the lines of the Union Jack
  • Fill in the gaps with blueberries
